  1. The triglyceride derived form three molecules of stearic acid is called stearin.
  2. Salts and esters of stearic acid are called stearates.
  3. Stearic acid is one of the most common saturated fatty acids found in nature after palmitic acid.
  4. Unlike palmitic, myristic and auric acid which are all long chain SFA’s, stearic acid does not raise blood cholesterol.
  5. Shown to have a neutral effect of blood total and low density lipoprotein cholesterol levels.
  6. May not increase risk of cardiovascular disease so it is suggested to not be grouped with other LCSFA’s
  7. Fats rich in stearic acid include coco butter, mutton tallow, beef tallow, lard and butter
  8. 9-14% of dietary stearic acid is converted to oleic acids
  9. Does not suppress LDL receptor activity in the presence of dietary cholesterol.
  10. Increased fibrin levels when consumed at 11% of total calories, though under 7% does not make an effect
